Hasan Khatib holds the position of professor and vice-chair in the Department of Animal and Dairy Sciences at the University of Wisconsin–Madison (Madison, WI). He earned his BS, MSc, and PhD from the Hebrew University (Jerusalem, Israel). Currently, his research focuses on exploring the role of epigenetics in various production, reproduction, and health traits in livestock. Of particular interest are the transgenerational effects of paternal and maternal nutrition on the phenotypes of subsequent generations. Notably, his team recently demonstrated that sperm DNA methylation patterns can be altered by paternal diet and inherited transgenerationally in sheep. Khatib is also engaged in identifying epigenetic markers that can predict embryo development and fertility using noninvasive methods. He has also served as the editor of the books: Livestock Epigenetics and Molecular and Quantitative Animal Genetics.

Aline Silva Mello Cesar is an associate professor in the Department of Food Science and Technology, Luiz de Queiroz College of Agriculture (ESALQ), University of São Paulo (USP), Brazil. She holds a degree in Animal Science from São Paulo State University (UNESP), an MSc in veterinary sciences from the Federal University of Uberlândia (UFU), and a PhD in animal science and pastures from ESALQ/USP, including a research internship at Iowa State University (Ames, IA) and Parco Tecnologico Padano (Lodi, Italy). She also completed a postdoctoral fellowship in genomics and animal breeding at ESALQ/USP and Iowa State University. Her research focuses on functional food and genomics, nutrigenomics and integrating omics data (transcriptomics, miRNA, metabolomics, epigenomics, and genomics) studies to advance precision nutrition and the quality of animal-derived foods. She coordinates interdisciplinary projects that apply molecular and bioinformatics approaches to understand DNA–gene–nutrient interactions and their implications for health and sustainability in animal production systems. Cesar also plays an active role in academic leadership and research management at ESALQ, having served as department vice-head and coordinator of the Food Science Bachelor’s degree course, and currently chairing the Research and Innovation Committee (CPqI). She advises graduate students in the Animal Science and Pastures, Animal Bioscience, and Food Science and Technology graduate programs, contributing to interdisciplinary training and research in Foodomics.
